Supplier Selection by Multi-Criteria Decision Making Methods in a Food Company: Pasta Industry Case

Abstract

Purpose: The main objective of the study is to establish a set of criteria that are effective in the selection of suppliers supplying raw materials to an enterprise operating in the pasta industry and compatible with the sector, weighting them with multi-criteria decision making (MCDM) techniques and ranking among alternative suppliers.
Methodology: Fuzzy SWARA method was used for criteria weighting, followed by Fuzzy TOPSIS and Fuzzy VIKOR methods to rank the suppliers.
Findings: In the first stage, 8 different criteria for durum wheat supplier selection, namely ease of payment terms, food safety, hygiene, quality, product variety, delivery speed, price advantage, company image and reliability, were weighted by Fuzzy SWARA method. Among these criteria, quality stood out as the criterion with the highest weight. In the next stage, 4 different suppliers, namely Domestic 1 (T1), Domestic 2 (T2), Import 1 (T3) and Import 2 (T4), were determined in line with the opinions of decision-making experts and the best supplier selection for the company was determined by Fuzzy TOPSIS and Fuzzy VIKOR methods. According to the results of both methods, durum wheat suppliers are ranked as T3, T1, T4 and T2.
Originality: The study is the first and unique study in terms of criteria weighting with fuzzy SWARA method for the enterprises supplying durum wheat in the pasta industry, followed by supplier evaluation with Fuzzy TOPSIS and Fuzzy VIKOR methods.

Bir Gıda İşletmesinde Çok Kriterli Karar Verme Yöntemleri İle Tedarikçi Seçimi: Makarna Sanayi Örneği

Abstract

Amaç: Makarna sanayinde faaliyet gösteren bir işletmeye hammadde temin eden tedarikçilerin seçiminde etkili olan ve sektörle uyumlu kriter setinin oluşturulması, çok kriterli karar verme (ÇKKV) teknikleri ile ağırlıklandırılması ve alternatif tedarikçiler arasından sıralamanın yapılması çalışmanın temel amacıdır.
Yöntem: Kriterlerin ağırlıklandırılmasında Bulanık SWARA yöntemi, ardından tedarikçilerin sıralanmasında ise Bulanık TOPSIS ve Bulanık VIKOR yöntemleri kullanılmıştır.
Bulgular: İlk aşamada makarnalık buğday tedarikçi seçimine yönelik ödeme koşullarının kolaylığı, gıda güvenliği, hijyen, kalite, ürün çeşitliliği, teslimat hızı, fiyat avantajı, firma imajı ve güvenilirliği olmak üzere 8 farklı kriter Bulanık SWARA yöntemi ile ağırlıklandırılmıştır. Bu kriterler arasında kalite, en fazla ağırlığa sahip kriter olarak öne çıkmıştır. Daha sonraki aşamada karar verici uzmanların görüşleri doğrultusunda Yurtiçi 1 (T1), Yurtiçi 2 (T2), İthal 1 (T3) ve İthal 2 (T4) olarak ifade edilen 4 farklı tedarikçi belirlenmiş ve firma için en iyi tedarikçi seçimi Bulanık TOPSIS ve Bulanık VIKOR yöntemleri ile belirlenmiştir. Her iki yöntem sonucuna göre makarnalık buğday tedarikçileri T3, T1, T4 ve T2 şeklinde sıralanmıştır.
Özgünlük: Çalışma, makarna sanayinde makarnalık buğday tedarik eden işletmeler için Bulanık SWARA yöntemi ile kriter ağırlıklandırması, ardından Bulanık TOPSIS ve Bulanık VIKOR yöntemleri ile tedarikçi değerlendirmesi yapması bakımından ilk ve özgün bir çalışma olma niteliğine sahiptir.
